The easiest option is to get a rotary encoder and use just the A or B signal.
These encoder wheels should work nicely:http://www.ebay.co.uk/itm/2-Speed-Measuring-Module-HC-020K-Photoelectric...
Each signal should pulse once per slot in the disc, causing the count to increase by one.
